Kathal ka achar recipe

We all love jack fruit or commonly called Kathal. It is so tasty and is prepared in many ways, but here I have given the recipe of Kathal ka Achar. You can make it very easily at home which is full of taste and health. Kathal ka Achar recipe is available in Hindi and English both.

Ingredients of Kathal ka Achar:-

  • Raw Mango – 1 kg
  • Kathal – 1 kg peeled and cut
  • Salt – 2 tablespoon
  • Turmeric Powder – 2 tablespoon
  • Kala Chana/ Chick peas – 20 gm
  • Red Chili Powder – 2.5 tablespoon
  • Asafetida – 12 gm
  • Mangrel/ Black Nigella Seeds– 20 gm
  • Moti Saunf/ Fennel Seeds – 120 gm
  • Methi/ Fenugreek – 20 gm
  • Mustard seeds/ rai – 100 gm grinded
  • Mustard Oil – 1 Lt

 How to prepare Kathal ka Achar:-

  • Cut kathal in small pieces.

  • Take water in a bhagona to boil.

  • Put 1 teaspoon salt in it.
  • When boiled, put kathal pieces in it.

  • When kathal is slightly soft, take it out.

  • Now put it in Sun to dry.

  • Take raw Mangoes, peel them and grate them into Lacha.

  • Now take all Lacha and kathal in a big bowl and put Kala Chana, 2 tablespoon Salt and 2 tablespoon Turmeric Powder, mix it well.
  • Note – wash kala chana and dry it and then put it in lachcha, it will swell in it.

  • Cover it with the jali and put it in Sun.
  • Mix it well 2-3 times in a day.
  • Mix all masala after 6-7 hours.
  • Take Mangrel, Saunf and Methi in a grinder and grind it little, do not make powder.

  • Now mix grinded masala with grinded rai and add mustard oil in it.
  • Mix it well.

  • Now cover it with a jali and keep it in Sun for 15 days.
  • Fill this much of mustard oil in achar.

  • Mix it well 2-3 times in a day.
  • After 15 days fill achar in a glass jar to store.

Final touching to preserve Kathal ka Achar:-

  • Be careful, always put dry spoon inside the jar and after taking out Achar, press the Achar in jar so that Oil comes up.
  • Your tasty Kathal ka achar is ready.
